Bird's nest, that is offered on the market, is classed into different grades based on their shapes. Premium whole whitened bird's nest, whole "bloody" bird's nest, whole bird's nest and bird's nest strips are first-grade. Bird's nest shreds, bird's nest in compact cake or ball forms and bird's nest fragments get a lower grade.

Although bird's nests have sorted out into different grades, their diet values are almost same. From modern medical perspective, bird's nest is wealthy in proteins and amino acids, which can help in lack of nutrition, gastric ulcer, anemia, heart failure and coarse skin. By origin, different kinds of bird nests can be classified into: Cave Swiftlet, House Swiftlet, Grass Swiftlet and Hair Swiftlet

Cave Swiftlet nest is more dark or yellow in color, containing more hair and harmful particles.it is firmer and crispy feeling when eaten. The cave nest are built in caves as well as on coves. Because of the tough natural climate and atmosphere, the nest is firm, hard and deeply colored. It's not too well-shaped compared to house nest and exhibits greater impurities. The cave nest is crunchy with a low swelling capacity that lengthens the time for it to swell when preparing.

House Swiftlet, on the other hand, is generally brighter, much softer, texture, less hair, softer and has tender feeling when eaten. The Home nest is built-in wooden-roofed swallow farmhouses which are damp and dark. The temperature inside (28°C - 30°C), brightness and relative humidity (90%) are relatively like the conditions based on the bird’s natural cave habitat. The swiftlet leaves the farmhouse to locate food within the wild each morning and returns at night. Because the farmhouse offers the wild birds a much better habitat, house nest contain very less impurities. They're cleaner, come with an intact boat or spoon shape, and also have a high swelling capacity. The whitened nests are smooth, as the yellow and bloody-red-colored nests are crunchier simply because they contain more minerals than whitened nest.

Last but not least, Grass Swiftlet and Hair Swiftlet contain more impurities compared to the nest itself, frequently used to mix along with other things or grinded for other purpose.
